Preparation:
1․ Cut the meat into small pieces. Heat oil in a frying pan, put the meat in it and fry under a lid on low heat for about 10 minutes. The liquid should evaporate.
2․ Finely chop the onion, throw it in with the pork. Season with salt and pepper. Cook for about 5 more minutes, until the onions are translucent.
3․ Grate the carrots or cut them into chunks. Pour them into the meat, salt and pepper. Roast under a lid for 5 minutes.
4․ Put the pepper pieces, sprinkle salt and pepper, cook for another 5 minutes.
5․ Chop the potatoes and courgettes not too coarsely, put them in the pan, salt and pepper. After 5 minutes, add the tomato pieces, salt and pepper.
6․ Braise the stew for 10-15 minutes or until the vegetables are soft. Pour in the chopped herbs, stir and let the stew simmer under a lid for a while.
